Good morning!
Hopefully you're not too groggy from the springing forward of the clocks this past weekend. For all you meat lovers, Pepper's full-service meat department is now offering Vintage 67 Alberta dry-aged beef! What is dry-aged beef? It's a process which allows beef to slowly self-tenderize with its natural enzymes. When beef enzymes are at work, some of the protein and fat are broken down into amino acids, fatty acids and sugars, all of which enhance the flavour and tenderness of the meat. The longer the beef dry-ages, the more intense and complex the flavours become. Vintage 67 beef is dry-aged for a minimum of 35 days.
If you have a sweet tooth then Pepper's has the ultimate delectable treat for you! Victoria's own Paul and Kelly DeRocco created Fudge In A Round in 2012 and offers dozens of incredibly unique and delicious fudge flavours, all in a perfectly portable round container. They're now based in Sooke but what's really cool is that last year, this husband and wife team was invited to Hollywood to be part of the pre-Emmy awards swag bag party! And this year, they were invited back, except that it was for the pre-Oscar award ceremony!
